Maybe I am not understanding your problem completely, but why not record directly in computer (with the LUNA card) using the ASIO destination module in SFP? This won't give you any lesser quality than sending it through a SPDIF loop.

Bitstream 3x and SFP?

I'm thinking of adding a midi controller to my SFP setup and I've stumbled onto Bitstream 3X. I've seen some sporadic references to it in this forum, but does anyone have any hands-on experiences using it together with SFP?

Other strong candidates are Behringer BCR/BCF2000 and M-Audio Keystation ...

I just realized that the software is open source that runs on Windows, Mac and Linux. If you figure out how to setup the camera on the table surface together with a projector you are good to go.
